3 Bean Salad

I was inspired by a Friends Facebook status asking friends of hers for a good recipe for a 3 bean salad. I realized that I had some beans in the pantry and threw this together today for an after workout snack.


1 can of Garbanzo beans (Chick Peas)
1 can of Kidney beans
1 can of black beans
1 Zucchini, peeled and sliced
1 fresh lemon, squeezed
1/4 cup parsley
1/2 tsp of Red Pepper flakes
1 tsp of Italian seasoning mix
Freshly ground pepper, season to taste


Empty the contents into a strainer and rinse. I always rinse my beans to wash away some of the salt content. Take your zucchini peel and slice it (you can leave the skin on also, make sure to wash it).
Once rinsed, add the beans, zucchini, seasonings, lemon juice and parsley to a container with a lid for storage after. Stir and enjoy!
It’s simple and easy yet satisfying
