I always love this time of year for many reasons such as warmer weather peeking through, blooming flowers and finally, Easter and Passover! Although I’m not Jewish, I do love me some Matzo!
Today for lunch, I made some tuna, mixed with expeller pressed Canola Mayonnaise (Spectrum brand) and a dash of pink Himalayan salt!
I topped the matzo with tuna, fresh avocado and some arugula. A quick, light, healthy lunch! Sooo yummy!
