Zucchini spaghetti with roasted red pepper cream sauce

Can we talk about how excited I am right now about my newest kitchen gadget?!!! My friend, Lauren, told me about a spiralizer she bought last week to make spaghetti out of yams and zucchini and I was immediately sold!!! I jumped right on Amazon and bought it!

It just came yesterday so today Mama Kat and I experimented and made zucchini spiral pasta with a super simple, delicious, nutritious red pepper, sweet potato cream sauce!!! This is the perfect Lent Meal but on a regular day, you can make some ground turkey and add it to this sauce for a healthy bolengnase!! The dish can be a dinner, lunch or even a great side dish!! You can also use the left over sauce as a soup and add wild rice!!

Here’s the recipe:

Makes about 2 cups

Ingredients:

1 cup steamed sweet potato chunks
1 cup nut milk or organic 1/2 and 1/2
1 teaspoon dried basil (I used fresh so tripled the amount)
2 cloves raw garlic
1 roasted red pepper (I roasted the pepper right over an open flame on my stove as the photo above shows)
1 1/2 teaspoons of pink Himalayan salt

Directions:

Throw all ingredients into a high-powered blender, like a Vitamix, and blend until smooth and creamy. Adjust seasonings to taste.

*If your sweet potato is freshly steamed, be careful when using the blender– the steam pressure can make the lid pop off! I used cold milk, to cool it down.

For the spaghetti:

Ingredients:
2 organic medium sized zucchini (you can also use yams)
1/4 cup organic chicken broth

Using a spiralizer or mandolin (on Julianne blade), grate your zucchini into the spirals or spaghetti form. So much fun!

In a large sauté pan, pour 1/4 cup of the chicken broth. You can also use vegetable broth. Throw in your spiralized zucchini or yams and put cover over it to steam, turning occasionally. After 5 minutes or until it’s reached your desired doneness, remove and ladle sauce over–garnish with basil. This can be enjoyed hot or at room temp.

We found that the sauce is delicious on it’s own and can be enjoyed as a soup by simply adding wild rice! What a great lunch with the leftover sauce!!
