Nannys Orzo Pasta Perfection

Today is Good Friday, a religious holiday observed primarily by Christians, commemorating the crucifixion of Jesus Christ. As with all the Fridays of Lent, Catholics are instructed to abstain from eating meat. If this applies to you then we have the perfect dinner for you…..

Instead of calling your local pizza place whose phones are ringing off of the hook, whip up Nanny’s Orzo Pasta Perfection. It is so easy to make and so AMAZING that you wont miss that pizza! Give it a whirl, you will not be disappointed..

 

Nannys Orzo Pasta Perfection

Ingredients:
1/4 Cup Red Wine Vinegar
2 Tbsp Fresh Lemon juice
1 tsp honey
1/2 Cup olive oil
6 Cups of Chicken Broth
1 small box of Orzo (Nanny prefers the brand Barilla but you can use a healthier option)
2 Container of grape tomatoes, halved
1 Cup of green onions, chopped
1 8 oz. container of Mozzarella pearls
1/2 jar of sliced calamata olives
 

Directions:

Whisk vinegar, lemon juice and honey in a bowl. Gradually whisk in oil, cover and chill. You can make this 2 days in advance.

Bring chicken broth to a boil in a large saucepan. Stir in orzo and reduce heat to medium, cover partially and boil until tender but still firm to bite, stirring occasionally. Drain and transfer to a large wide bowl, tossing frequently until cool.

Once orzo is cooled, add tomatoes, green onion, olives and mozzarella pearls. Season with salt and pepper to taste. Serve at room temperature and enjoy
