Chia Coconut Banana Pudding


Last night before I went to bed I prayed for good health, for my enemies, those that are sick, those that have passed and their family and friends left behind. I prayed that God give me the energy to get through the following day with a clear head and to guide me in the right direction. Well, I woke up this morning, completely forgetting my prayers from the night before, and was so awake and ready to go. I started pulling out ingredients in the refrigerator and whipped together this delicious chia pudding. I also started brain storming on where I wanted to take this 2momsinthekitchen as a business and came up with a ton of amazing ideas (stay tuned) I love having a partner like Mama Kris because she is the first person that I call when I have all of my ideas and thoughts and she is always SUPER supportive and SUPER enthused. She is an amazing partner who pushes me to always go BIG.

So after my convo with Mama Kris I pulled out some mason jars and made some chia puddings to store in the refrigerator.

I managed to do laundry, vacuüm, mop, wash the windows and do the dishes. Fed my son, gave him a bath (after he stuck his hands down his #2 filled diaper) but I took it with a grain of salt, eh it happens, what are ya gonna do?

The day was going by without a hitch. I was getting so much accomplished because as you know when you have a child the day fly’s by (it’s insane) I wasn’t tired or dragging my butt around. I was inspired and thinking I could conquer the world. THEN IT HIT ME! I prayed to have this energy and clear mind today, this was my ah ha moment. I realized with good food that supplies your body with energy and good prayers so much could get accomplished. I look forward to whats ahead and I hope you are too.


1/3 cup chia seeds
1 1/2 cup coconut milk
2 TBSP shredded coconut
1 banana, mashed

To top off this amazing breakfast (or even dessert) add your favorite fresh fruit, granola or nuts.


Add the chia seeds to the coconut milk in a mason jar and leave overnight. In the morning mash up 1 banana and add it to a bowl. Remove the chia mix and add on top of the banana. Continue by adding the shredded coconut and your favorite toppings. Enjoy!
