Tell us Tuesday–Portobello Mushroom Recipe

In honor of Tell Us Tuesday, we wanted to share a recipe that was shared with us by my (Mama Kris) sister! This was her own creation and we think it sounds and looks delicious so we wanted to share it with all of you!

What you’ll need:

1 large Portobello mushroom
1-2 cups of fresh spinach
Olive oil
Pink Himilayian salt
Freshly ground black pepper
Fresh Mozzarella
Balsamic vinegar

Preheat your oven to 425 degrees. Take your Portobello mushroom and drizzle lightly with olive oil and season with pink Himalayan salt and freshly cracked black pepper. Then, take your spinach and layer it over the mushroom. (Remember spinach wilts down so it will look like a lot at first so don’t be stingy) Top with fresh mozzarella (how ever much you like) and finish it off with a drizzle of olive oil and a bit more salt and pepper! You can get creative and add other toppings of your choice such as onions, peppers, etc.

Place the mushroom on a baking sheet or in a glass baking dish and cover loosely with foil. Pop that baby in the oven and bake for 10 min. Then remove the foil and bake for another 3-5 min. Once you take it out, drizzle with a little balsamic vinegar!
