Pork chops w/Apple Coconut topping







2 boneless organic pork chops
2 TBSP coconut oil
3 apples, peeled, cored and chopped
1 sweet medium onion, peeled and chopped
1/4 cup coconut milk
1 tsp cinnamon powder
Shredded coconut, optional
Himalayan salt to taste


Preheat your grill top. Season your pork chops with salt and place them on the grill. Let cook for 5 minutes and turn at a 160 degree angle. Wait 5 minutes and flip over. Wait 5 minutes and turn at a 160 degree angle.

While your pork is cooking prepare your topping….

Peel and chop 1 medium sweet onion and set aside.
Peel, core and chop 3 apples. I used honey crisp but you can use whatever you have on hand.
In a large skillet on medium heat add 2 TBSP of coconut oil. Once heated add the apples and onion. Cook for 2 minutes. Add cinnamon on top and cook for 5 minutes.
Add 1/4 cup of coconut milk (not water) and mix until well blended. The onion/apple mixture will start to thicken.
Take your pork chops off of the grill and place it into the apple mix. Cook until the inside temperature is 145 degrees (to achieve a medium temp pork)
Plate & Finish off with some coconut flakes on top. Enjoy!

Plate and add some unsweetened shredded coconut flakes on top.

I baked a whole organic sweet potato on 350 for 45 minutes and topped it with a little organic maple to have with my pork meal.
