Chocolate Chip Cookies-Mother tested, Kid approved

The original recipe for these cookies was found on the back of Bakers Corner Semi-sweet chocolate morsels but Samantha made it her own by changing some of the ingredients for healthier ones. Here is her healthier version of chocolate chip cookies…..

Ingredients:

1 Cup Unsalted Butter

1 Cup Maple Syrup (you could also use honey)

1 whole egg

1 egg white

1 1/2 Bakers Corner Semi-Sweet Chocolate Morsels

1 tsp Baking Soda

1 tsp Sea Salt

1 tsp Vanilla

2 Cups Bobs Red Mill low carb baking mix

Directions:

Preheat oven to 375 degrees. Cream together butter, eggs, soda, salt and vanilla. Mix in remaining ingredients. Drop by teaspoonfuls, 2 inches apart, onto greased cookie sheet. Bake 12-15 minutes or until lightly golden.

Tip: When you are done baking, take them out and slam them on the counter (on the baking sheet) to release air and keep them soft.

These do not look like your normal chocolate chip cookies, they are more lumpy (because of the baking mix), but they are fluffy and soft in the center.

I took them out of the oven and placed them on a plate to cool down.  I took one, while it was still warm and brought it to my son who was watching tv and offered him a fresh baked chocolate chip cookie. He immediately said “yes!” But then said “wait a second,  are these healthy?” I told him they were “normal” cookies and I ran out if healthy ingredients,  so they are kid safe to eat. He replied “oh good.”
