Ingredients:
- 1/2 lb 93% lean ground turkey
- 1/2 bell pepper, cut in very small pieces
- 1/4 onion, cut in very small pieces
- 1/2 cup of tomatoes sauce (I used Ragú meat flavor)
- 1/2 cup Cheddar/Mozzarella Cheese
- 5 zucchinis cut in half lengthwise
- Garlic Salt and Pepper
Directions:
Using a small spoon hollow out the center of the zucchini halves, leaving 1/4″
thick. Chop the scooped out flesh of the zucchini in small pieces and set aside. – Boil water in a large pot and add the zucchini halves, leave them there for about 4 minutes, then remove from water.
Cook turkey meat with spices (I used garlic, salt and pepper). Once it’s cooked through add bell pepper, onion and the reserved zucchini. Remove any extra water and add tomato sauce. Let it cook all together on medium heat for about 10 min.
Preheat oven to 375 degrees. Add tin foil to a baking sheet and place the
zucchini halves on top. Using a spoon, fill the top of the hollowed zucchinis with the turkey meat.
Add cheddar/mozzarella cheese on top. Cover with foil and place them inside the oven for 20 minutes or until cheese is melted.
Salad:
Mix lettuce, kale, cabbage, broccoli, brussels sprouts, cucumbers, and tomato with NewMan’s Own Olive Oil & Vinegar dressing, squeeze half of a lime to the salad and add oregano and salt and mix it all together. Let stand for few minutes.
