Recently I have been craving hard-boiled eggs. I usually eat them whole with a bit of Himalayan salt I sometimes make deviled eggs or in this case GUACAMOLE stuffed eggs. Yes I said GUACAMOLE!!!! Soooo scrumptious, I literally could eat this everyday of my life haha
So to get started you have to hard-boil your eggs- 4 eggs for this recipe. We have a previous post explaining how to do so here
Ingredients:
4 eggs
1 avocado (I use Haas)
1/4 tsp cayenne pepper
Pinch of Himalayan salt
1/2 lime
Red onion, I chopped up a small piece of red onion since the flavor can easily overpower any dish.
Directions:
While you have the eggs going, slice your avocado in half lengthwise, discard the nut and empty the contents into a bowl. Add your cayenne pepper, salt and squeeze the juice of 1/2 a lime and mix well.
Once the eggs are done, peel, cut lengthwise and empty the cooked yolk into the avocado mix. Continue to do this until all yolks have been blended into the mix.
Now all you have to do is spoon it back into the egg and indulge.
For an extra kick of spice you can sprinkle some cayenne on top as I did.
