Turkey meatloaf & Sweet potato fries

Mama Kris recently posted a meatloaf recipe that I not only made but absolutely loved. I was thinking of making it again but realized that I didn’t have any ground beef but I did have ground turkey so I thought “ground turkey meatloaf…..ummmm ok?!!!” So away I went, I hope you enjoy because we did!





1 lb. ground turkey
1 egg
2/3 cup cooked quinoa
2/3 cup panko
2 cloves of garlic, chopped
Fresh basil
Himalayan salt
Fresh mozzarella
Organic ketchup


Preheat oven to 350

Cook quinoa as directed on the package. I always make a lot and what I don’t use for my recipe I keep stored in my refrigerator for another time.

Mix turkey, panko, egg, cooked quinoa and garlic in a large bowl. Place saran wrap on the counter and add 1/2 of the meat mix on top shaping it into a meatloaf. Lay down 3 slices of mozzarella cheese on top of your loaf (add more for a very cheesy meatloaf) and a few leaves of basil. Take the other 1/2 of the meat and lay it on top pinching both the ends and sides together to create a seal. With the saran wrap gently roll the meatloaf so there are no lumps or bumps. Place on a lightly greased cookie sheet (Mama Kat and Mama Kris use their Misto oil sprayer that you can find in their Amazon store)
Place in the oven and cook for 30 minutes.
Take out the loaf and cover the top and sides with your organic ketchup and roast for another 30 minutes or until your meat thermometer reads 155F.

While your meatloaf is cooking get started on your sweet potato fries….


Sweet potato fries


3-4 medium organic sweet potatoes, washed

*If you are using organic sweet potatoes you can leave the skin on, if not please peel your potato first since the skin is often treated with dye or wax

Misto olive oil sprayer

Cayenne pepper

himalayan salt to taste

Parmesan cheese, optional



Wash the skin of your organic sweet potatoes, I use a vegetable brush to really scrape the dirt off. Place the potatoes on a paper towel or kitchen towel to dry.

Take out your mandolin, remove the safe blade and replace it with the french fry blade and turn the knob to the biggest width.

*You can also use your spiralizer or cut them with a sharp knife into french fry portions

Lay tin foil down on a cookie/baking sheet and lightly grease with your mist oil sprayer. Place the sweet potatoes onto the sheet and lightly sprinkle with cayenne pepper & salt.

*You can add any seasoning that you like or none at all

Bake in the oven at 350 for 30 minutes. Take out and flip them over baking for an additional 15 minutes. Take them out and lightly sprinkle with parmesan cheese and any fresh herbs you have on hand, personally I prefer some cilantro 😉

I can eat them as is without using ketchup or any other dressings but if you want to skip the parmesan my absolute favorite way to eat sweet potato fries is baked with only himalayan salt and topped with pure maple honey when done. It’s so good and so addicting. You’ll thank me for this!!
